I'm always looking for quick and easy breakfast ideas....Trader Joe's now carries egg-less, Gluten Free Waffles :)! Yippee! I just pop one in the toaster, add a little maple syrup, a dollop of greek yogurt and a handful of berries on top ...and voila, I have a de-lish vegetarian, gluten-free breakfast in less than 5 minutes!Best of all, these also make a great dessert in  a pinch....move over Strawberry Shortcake, Hello Berry Wafflecake :).

INGREDIENTS

  • 1 frozen waffle 
  • maple syrup to taste
  • 1-2 tablespoons Greek Yogurt (for dessert, you can replace this with whip cream or ice cream)
  • 3/4 cup fresh fruit (strawberries, blueberries, peaches...whatever you like)

DIRECTIONS for cooking

  1. Place waffle in toaster or toaster oven on medium toast setting.
  2. Once toasted place waffle on plate and drizzle maple syrup.
  3. Add a dollop of Greek Yogurt.
  4. Top with fresh fruit.

  • Omit yogurt or replace with coconut milk yogurt.

GLUTEN FREE NOTES

  • Totally gluten-free!

YOGIC COOKING NOTES

  • It's not ideal combining yogurt with fruit. To be more Ayurvedically correct, it would be best to omit the regular yogurt and replace with coconut milk yogurt.
